Sushi that Speaks for Itself

Sustainability is a big issue for our Bellevue Japanese restaurant, with many important species of fish at risk of being overfished into oblivion. Many sushi restaurants are therefore working to spread the message of sustainable seafood consumption, promoting the use of the healthier fish populations and fish that are more commonly farmed. One particular restaurant in England, though, is letting the sushi speak for itself.

This restaurant, a British chain by the name of Moshi Moshi, came up wit the idea of printing out edible QR codes to place on their sushi rolls. These codes are printed in squid ink on rice paper, and link diners to a page that gives them information on the sustainability of the particular sushi they are enjoying. This practice started out as a promotion back in 2012, but quickly turned into a regular part of the Moshi Moshi dining experience.
